We Have A Winner!

 Recipes
 Sorry can't be responsible if you don't like it or doesn't
taste good ... can't test everything and I would weigh about
400 lb.. if I did!

 Apple Crisp

5 to 6 cups sliced baking apples (about 4)
1 cup Gold Medal® whole wheat flour
3/4 cup packed brown sugar
1/3 cup butter, margarine or spread,* melted and cooled
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 egg
Ice cream, if desired

Heat oven to 350°. Arrange apples in ungreased square baking
dish, 8x8x2 inches. Stir together remaining ingredients except
ice cream until crumbly; sprinkle over apples. Bake 35
to 45 minutes or until apples are tender. Serve warm with
ice cream.

 Kitchen Tips 

Heat lemons and limes for 30 seconds in the microwave in order
to squeeze more juice.

To speed up hamburger cooking, poke a hole in their centers
when shaping. This causes the centers to cook quickly and the
holes are gone when the hamburgers are done.

News from Possum Waller
Well it is official! Possum Waller has its own "Super Hero"
Yep, Supperman it is! The local residents are not to used to him yet and he did cause quiet a stir when he started showing up for supper at different houses this week. The choice of a gravy stained tea shirt and an old sheet for a cape did leave something
to be desired though. There was one nasty suprise though when  Supperman had to go to the doc's office to have some rock salt  removed from his ... uhh.."cape". It seems he surprised "Crock" one of the last remaining Civil War vets. Crock said he thought it was a "Yankee Patrol" sneaking through. Well at least he still
shoots pretty good.
As you may know Apples are coming into there season and I was
gonna honor Johnny Appleseed (Chapman, John) (1774-1845) who
was a pretty interesting guy. Crock said he actually met Johnny
when he came through Possum Waller in about 1838, but now you know
why we call him "Crock".

 Lemon Slushy Punch

2 (3 ounce) boxes lemon gelatin
4 cups hot water
1/2 cup sugar
1 (12 ounce) frozen lemonade concentrate
1 (46 ounce) can pineapple juice
1 liter Sprite

Dissolve gelatin with hot water, then add sugar. Add lemonade
concentrate and pineapple juice. Freeze in gallon freezer bags.
When ready to use, thaw ahead of time and add cold Sprite.
Serves: 25

Orange Coconut Cake

1 box orange or yellow cake mix
1 small package of orange gelatin (3 ounces)
1 cup water
1/3 cup oil
2 eggs

Combine ingredients and beat 3 minutes at medium speed of
electric mixer. Pour batter into two 9-inch bake pans. Bake
according to package directions. Cool and split layers.
Yield: 16 servings.

Filling:

1 (16 ounce) carton sour cream
Juice of 1 orange or 1/4 cup orange juice
1 (6 ounce) frozen coconut
2 cups sugar

Combine ingredients. Reserve 1 cup for frosting. Filling
between layers.

Frosting:

Reserved filling
1 (8-ounce) carton whipped topping

Combine filling and topping. Spread on sides of top of cake.
Refrigerate 24 hours before serving.

 Kitchen Tips 

Clean a thermos bottle. Fill the bottle with water, drop in
four Alka-Seltzer tablets, and let soak for an hour (or
longer, if necessary).

Unclog a drain. Clear the sink drain by dropping three
Alka-Seltzer tablets down the drain followed by a cup of
Heinz White Vinegar - Wait a few minutes, then run the hot
water.

News from Possum Waller

It seems our big city neighbor has been shopping around for
its own "super hero". Superman, Batman and Spiderman seem
to have permanent contracts with some cities. Charlotte
asked Aquaman if he wanted the job, but he insisted that they
flood the streets. The city council said they didn't need any
more of that. Well the local residents here started clamoring
for our own action hero, it was suggested that we use Possum-man,
but it seems some fellow down in Australia may have that one
already. I think we should see if Armadillo-Man is available,
that is if he is all done down on I-10 in Texas. I think it would
make a good sign out at the city limits ... "Possum Waller ...
Home of Armadillo-Man ... defender of Truth Justice and American
Interstates!" Well, guess we could use "Supperman" shows up at your
house around suppertime?

The news has been missing for a long while now,but we're back ! 
For those of you that have not had the privilege of reading the News from Possum Waller in the past are in luck. 
You haven't missed out.....we are going to be republishing a lot of the possum waller news. 
For those that ain't familiar ...well it's all just southern humor ,good recipes,kitchen tips & hints and some bad jokes.










This our little mascot....bubba duck. We are wildduck books/publishing..........there are southern cookbooks that will be available in ebook form and we'll give ya a sneek peek a some of the recipes.
